How I Eat With Hashi’s

During the month of November, I am writing about what I am grateful for. Today is about the food for which I am grateful.

If you’ve followed my blog for any length of time, you know that I was diagnosed with Hashimoto’s Thyroiditis two years ago. I wrote about my diagnosis here.

Since I have started on my thyroid journey, I first started on a paleo diet and had been on an AIP (autoimmune protocol) diet most recently. I also did the Whole 30 Diet, as well. This way of eating helps with the inflammation that is caused by my thyroid disease. It also helps to heal my gut which is imperative for my healing.

My food journey has been difficult, to say the least. I had to change the way that I ate and view food as a way to help my body. When someone asks me if I miss pizza, or tamales,  or pop, of course, I do. However, I have to look at the harm those foods will cause my body.

The pictures show a typical grocery run for our household. I eat fruits and vegetables that are AIP compliant, fish and chicken. My husband is the chef in our family and is always trying new things to give me something different. One of my favorite meals is AIP compliant tortillas (that he makes), grilled chicken, and homemade guacamole. Yum!

I also love Pascha chocolate bars. They are allergy friendly. We buy the 70% cacao. I don’t eat chocolate often, but it’s nice for a sweet treat every once in a while.
